This final step teaches you no new technique. It brings together the record-keeping obligations produced by the previous thirteen, and raises the question that decides the commercial value of your production: what can you prove?
Compliance is built, not checked
A widespread idea holds that compliance is a formality at the end of the journey: you produce, then you have it analysed. That reading is uncomfortable for a simple reason: by that stage, it is too late to act on what the analysis will measure.
Run back through the journey. The choice of a catalogue variety and the content threshold were settled in step 1. Inputs and their traceability come from the steps on water and on pests. The health status of the batch depends on climate and prophylaxis. The microbial load depends on drying. Each of these decisions will show up, one way or another, in what you are able to demonstrate.
